As we mentioned in our Empanadillas de Bonito recipe, the Empanadillas are the little sister of the famous Empanada. Today we will show you the Empanadillas Vegetarianas, the vegetarian version of them.
Empanadillas Vegetarianas are a perfect appetizer if you are planning to host a party or a dinner with friends, as you can prepare a lot of them in a decent amount of time and no one will be dissapointed.
- 1 onion
- 1 clove garlic
- 1 red pepper
- 1 green pepper
- 200 ml crushed tomato
- 1 teaspoon sugar
- 1 teaspoon salt
- 16 pieces pre-made pastry
Slice some garlic, and chop an onion and peppers into small pieces. Heat two tablespoons of olive oil in a big pan. Toss the onion in. Cook it for 8 minutes over medium heat until it gets soft.
Add the rest of vegetables as well as the salt and sugar and stir-fry for another 5 minutes or until they are very soft. Add the crushed tomatoes and cook for 15 minutes over a low heat.
Take one piece of pastry. Take a spoonful of the ingredients from the bowl and dump them in the middle of the pasty. Close the pastry very well.
Once you have all your empanadillas filled, you can deep-fry them in a pan full of olive oil or alternatively you can brush them with a whisked egg and bake them in a preheated oven at 200ºC for 10 minutes.
