Gazpacho is a taste of summer in your mouth. Not only is it delicious and refreshing, it’s also very easy to make. You will only need a couple simple ingredients and a food processor or blender to blend all your ingredients together.

It is so simple to make that you’ll become an expert in gazpacho in no time at all. That can come in quite handy if you’re planning to live in or visit Spain anytime soon, because you’ll be able to tell the difference between the good and the watered down gazpacho that some restaurants serve.

If you want to add any topping you have many options like croutons, olive oil, cream or the classic Spanish ham and chopped hard-boiled eggs, which was our choice.

Homemade Spanish Gazpacho recipe. You will only need 10 minutes of your time, a couple simple vegetables, olive oil and a blender.

Ingredients
 
 

  • 1 kg tomatoes
  • 1/2 green pepper
  • 1/2 small cucumber
  • 1 clove garlic
  • 50 ml olive oil
  • 50 ml vinegar
  • 1 teaspoon salt
  • 1 egg (optional)

Instructions
 

  • Wash and chop all the vegetables and throw them in a blender. Peel the garlic clove and throw it in the blender.
  • Blend for a couple of seconds, and then slowly add 50 ml of olive oil and the same amount of vinegar and continue blending until you reach a soup-like consistency.
  • You can add some cold water and keep blending a little more if you feel that the texture is not liquid enough. But if you used tomatoes which were mature and that didn’t have extra-thick skin, the consistency should be okay without the need to add extra water.
  • Boil an egg, peel it and chop it on top (optional)
