Not only we’re going to show you how to prepare Ali Oli (usually referred to as “aioli”in English) in just a few minutes, but we are also going to show you how to make it without egg. This recipe is simpler and safer (because there is no raw egg that can cause food poisoning).
This vegetarian sauce originated from ancient Egypt, although it is said that the Arabs were the ones who brought it to Spain. It’s still commonly used in bars and restaurants as a dipping sauce, and to accompany dishes like arroz negro, arroz a banda or fideuá, just to mention a few.
- ½ cup milk
- 1 cup sunflower oil (always double the amount of milk)
- 1 clove garlic
- A pinch of salt
Place the milk in the jar of a hand held blender. Add the peeled garlic clove and a pinch of salt and tilt the jar a little bit.
Insert the mixer. Start the mixer and gently pour the oil inside. The oil should slide through the jar before touching the milk. Keep pouring the oil, still blending until the mixture start to become creamy. It should have the consistency of mayonnaise. If you run out of oil and the texture is not creamy yet, just add some more oil.
Place in the fridge for a couple of hours before serving.
