Ever wondered where mayonnaise originated from? Believe or not, mayonnaise originally comes from Spain. To be more specific, this recipe comes from Mahón, in Menorca.

But let’s be fair. It was probably created by the French army after they conquered the port of San Felipe de Mahón in 1756. It is said that they tried the Ali-Oli sauce, also from there, and weren’t fans of the strong garlic flavor. So they removed the garlic from the recipe, and that’s how they got this mayonnaise recipe.
So, you are right to say that it’s not really a Spanish invention, but it does come from Spain.

Ingredients
- 1/4 liter sunflower oil
- 1 egg
- 1/2 lemon
- salt
Instructions
- Get a hand held blender jar and crack the egg inside. Squeeze ½ lemon on top and add a pinch of salt.
- Insert the mixer. Start the mixer and gently pour the oil inside. The oil should slide through the jar before touching the milk. Keep pouring the oil, still blending until the mixture start to become creamy. If you run out of oil and the texture is not creamy yet, just add some more oil.
