This is another Spanish dish for the absolute beginner; it doesn’t take too much skill and only requires a few basic ingredients, yet it is simply delicious. Eggs (huevos) are very common as a tapa in bars and restaurants. You can find huevos rotos, huevos estrellados or simply huevos fritos, but they are basically the same thing. 

The reason we´ve included the “con jamón” version is because it is the most popular all over Spain. But you can also find them “con morcilla” , con chorizo” , con gulas” …There are endless options…

  • 3 eggs
  • 750 grams potatoes
  • 4 slices jamon serrano
  • olive oil
  • salt
  • 1/2 teaspoon sweet paprika


  • Peel and cut the potatoes just the way you like them, and fry them in a big frying pan full of very hot oil. Once they are ready, place them in a plate lined with paper towels in order to release the grease. After 1 or 2 minutes, place them in a different bowl (not lined with paper towels).
  • In the meantime, chop the jamon serrano into small pieces. Get a clean pan, add ½ tablespoons of olive oil and fry your jamon serrano for about 3 minutes. It should become dark and cripsy. Set it aside for later.
  • Crack and fry the eggs one by one in a frying pan full of very hot oil. Add some salt and toss some hot oil with the help of a slotted spoon on top of the egg yolk to make sure it is not completely raw.
  • Place the fried eggs on top of the fries and top the fried eggs with your jamon chips. Add some sweet paprika on top.
