Huevos Rotos con Jamon Recipe
Huevos Rotos are very often offered as a tapa in spanish bars. Do you want to get some tips on how to prepare it? Then, give this recipe a try!
- 3 eggs
- 750 grams potatoes
- 4 slices jamon serrano
- olive oil
- 1/2 teaspoon sweet paprika
Peel and cut the potatoes just the way you like them, and fry them in a big frying pan full of very hot oil. Once they are ready, place them in a plate lined with paper towels in order to release the grease. After 1 or 2 minutes, place them in a different bowl (not lined with paper towels).
In the meantime, chop the jamon serrano into small pieces. Get a clean pan, add ½ tablespoons of olive oil and fry your jamon serrano for about 3 minutes. It should become dark and cripsy. Set it aside for later.
Crack and fry the eggs one by one in a frying pan full of very hot oil. Add some salt and toss some hot oil with the help of a slotted spoon on top of the egg yolk to make sure it is not completely raw.
Place the fried eggs on top of the fries and top the fried eggs with your jamon chips. Add some sweet paprika on top.
