Also known as Sopa Castellana, this is a great dish if you you’re wondering what to do with all the stale bread you have on your kitchen counter. Now, we must say that it doesn’t look very appetizing, but trust us: it’s very easy to prepare, and is nice and warm and full of flavor- perfect for those winter nights!
Keep in mind that it is heartier than a regular soup, so don’t serve a lot of it if you’re planning on having a light dinner or lunch.

Sopa de Ajo Recipe
Sopa de Ajo is a spanish recipe that uses garlic as a key ingredient. It is another instance of a simple dish that just needs a couple of ingredients.
Ingredients
- 100 grams stale bread
- 2 liters water
- 8 cloves garlic
- 1 cayenne pepper
- 30 grams jamón serrano
- 1 teaspoon sweet paprika
- olive oil
- salt
- 2 eggs (optional)
Instructions
- Peel and chop 8 garlic cloves into thin slices. Cut the bread into medium-size pieces. In the meantime boil the 2 liters of water.
- Stir-fry the garlic in a pot with 4 tablespoons of olive oil and a small cayenne pepper for a minute or until they start to brown. Add some jamón chopped into small pieces.
- Mix the jamón with the garlic cloves and fry over low heat for another minute. Add the bread along with a teaspoon of sweet paprika. As soon as the bread has absorbed all the oil, add the boiling water. Toss all this together and let it boil over medium heat for about 10 minutes.
- Crumble the bread with a spoon adding some salt at the end, if you think it needs it. Also, you can add two eggs on top and scramble them while the soup is very hot.
