Gazpacho is a summer’s recipe by definition. It’s everyone’s favorite in Spain because it’s light, refreshing, cheap and very easy to prepare. As you probably know already, tomatoes form the base of this raw soup. In this instance, we’re adding watermelon as well which provides a delicious sweet taste to it and makes it a bit softer than the original gazpacho recipe.

You can add many toppings like croutons, olive oil, cream or the classic Spanish ham and chopped hard-boiled eggs. In this instance, however, we decided to go for some Feta cheese which gave it the perfect touch.

Ingredients
 
 

  • 500 gr tomatoes
  • 350 gr watermelon
  • 1/2 green pepper
  • 1 clove garlic
  • 50 ml olive oil
  • 20 ml vinegar
  • 1 teaspoon salt
  • 200 gr Feta cheese (optional)

Instructions
 

  • Wash and chop all the vegetables and the watermelon and throw them in a blender. Peel the garlic clove and throw it in the blender.
  • Blend for a couple of seconds, and then slowly add 50 ml of olive oil and the same amount of vinegar and continue blending until you reach a soup-like consistency.
  • You can add some cold water and keep blending a little more if you feel that the texture is not liquid enough. But if you used tomatoes which were mature and that didn’t have extra-thick skin, the consistency should be okay without the need to add extra water.
  • Keep it in the fridge for at least 1 hour before serving.
  • Cut the Feta cheese in dices and add it on top(optional).
