Watermelon Gazpacho Recipe
A softer version of the authentic gazpacho recipe.
- 500 gr tomatoes
- 350 gr watermelon
- 1/2 green pepper
- 1 clove garlic
- 50 ml olive oil
- 20 ml vinegar
- 1 teaspoon salt
- 200 gr Feta cheese (optional)
Wash and chop all the vegetables and the watermelon and throw them in a blender. Peel the garlic clove and throw it in the blender.
Blend for a couple of seconds, and then slowly add 50 ml of olive oil and the same amount of vinegar and continue blending until you reach a soup-like consistency.
You can add some cold water and keep blending a little more if you feel that the texture is not liquid enough. But if you used tomatoes which were mature and that didn’t have extra-thick skin, the consistency should be okay without the need to add extra water.
Keep it in the fridge for at least 1 hour before serving.
Cut the Feta cheese in dices and add it on top(optional).
