Macarrones con Chorizo Recipe
- 400 gram macaroni or any other kind of pasta
- 200 grams chorizo
- 1 onion
- 2 cloves garlic
- 600 grams tomato sauce
- 100 grams Parmesan cheese
- 1 bay leaf
- 1 teaspoon oregano
Start by picking up any pasta of your choice. Toss it into boiling water, add some salt and cook it till it’s ready according to the instructions you will find on the package.
Mince two garlic cloves, chop an onion and cut the chorizo into 4 or 5 cm pieces.
Heat some oil in a frying pan and toss in the onions and garlic. Sauté them for about 5 minutes, until they’re soft.
Add the chorizo and fry for another 2 minutes. Next, add the tomato sauce, as well as the bay leaf, and oregano and mix everything together well. Cook for 5 minutes over low/medium heat.
Remove the bay leaf and add the drained pasta into the sauce. Mix everything together well and place in casserole dish.
Grate some cheese and add it on top.
