Homemade Spanish Gazpacho recipe. You will only need 10 minutes of your time, a couple simple vegetables, olive oil and a blender.

  • 1 kg tomatoes
  • 1/2 green pepper
  • 1/2 small cucumber
  • 1 clove garlic
  • 50 ml olive oil
  • 50 ml vinegar
  • 1 teaspoon salt
  • 1 egg (optional)


  • Wash and chop all the vegetables and throw them in a blender. Peel the garlic clove and throw it in the blender.
  • Blend for a couple of seconds, and then slowly add 50 ml of olive oil and the same amount of vinegar and continue blending until you reach a soup-like consistency.
  • You can add some cold water and keep blending a little more if you feel that the texture is not liquid enough. But if you used tomatoes which were mature and that didn’t have extra-thick skin, the consistency should be okay without the need to add extra water.
  • Boil an egg, peel it and chop it on top (optional)
