Homemade Spanish Gazpacho recipe. You will only need 10 minutes of your time, a couple simple vegetables, olive oil and a blender.
- 1 kg tomatoes
- 1/2 green pepper
- 1/2 small cucumber
- 1 clove garlic
- 50 ml olive oil
- 50 ml vinegar
- 1 teaspoon salt
- 1 egg (optional)
Wash and chop all the vegetables and throw them in a blender. Peel the garlic clove and throw it in the blender.
Blend for a couple of seconds, and then slowly add 50 ml of olive oil and the same amount of vinegar and continue blending until you reach a soup-like consistency.
You can add some cold water and keep blending a little more if you feel that the texture is not liquid enough. But if you used tomatoes which were mature and that didn’t have extra-thick skin, the consistency should be okay without the need to add extra water.
Boil an egg, peel it and chop it on top (optional)
